Thanksgiving and Other Stuff

OK, I've told you what I won't do for Thanksgiving this year. I've decided what I will do. Since Thanksgiving falls on my day off this year, I've decided to cook. My meal will consist of a turducken breast, Cajun sausage stuffing, corn and cranberry sauce made from scratch. Last year, I made a complete turducken and took it to work. People are still raving about that. This year, since it's just me, I'm going to stuff a chicken breast into a duck breast into a turkey breast and stuff that with Cajun sausage. Yeah, like I have anything better to do. I have taken to slicing the kernels off corn on the cob. There's much less waste and it doesn't get in my teeth. I got a letter from Virginia last Monday informing me that I had not cashed a tax refund check for $151.00 and if I didn't request a replacement check by WEDNESDAY, they would put the money into an unclaimed funds account. So, I immediately popped a request into the mail and it must have gotten there on time, because I now have an extra $151, which I'm doing to apply to a bluetooth module for my car's audio/video/navigation system. Can't call it a car radio anymore. It is going to take all I have to come in to work tonight. It will be cold outside, I will be toasting my toes in front of my fireplace, while watching O'Reilly and sipping a cappuccino topped with whipped cream, and all will be right in the world. And then, I'll have to get up and spend another 10 hours in here writing about violence in Afghanistan, turmoil in Pakistan and deaths from a cyclone last week in Bangladesh. It seems when the world extends outside my apartment, very little is right. Remember about a year ago when Hillary said if Democrats were elected to Congress, they would bring down the "outrageous" price of gas? Whatever happened to that? But, milk is still more expensive. Because of you I ordered a turducken this year...I am making one along with frying a turkey!

Now I want your stuffing recipe. My husband likes spicy!!!

This is my first turducken. Got any tips? Is it moist?

Since it's already prepared, just follow the instructions. Allow for an extra hour just in case it doesn't cook in the alloted time. It should be quite moist and tasty.

STUFFING

Preheat oven to 325 degrees F. Spray 13x9-inch baking dish with cooking spray. Set aside.

1 pound spicy pork sausage
16 ounces unseasoned cornbread stuffing mix
2 cups chopped celery
1 onion, chopped
4 tablespoons butter, melted
1 1/2 cups turkey broth
salt and pepper to taste
Creole seasoning to taste


DIRECTIONS

1. Place sausage in a large, deep skillet. Cook and crumble over medium high heat until evenly brown.
2. In a large bowl combine the dornbread stuffing with the sausage and pan juices. Stir in the chopped celery, chopped onion, and butter.
3. Add the broth/liquid a little at a time until the dressing is moist but not soggy. Season to taste with salt, pepper and Creole seasoning.

Bake 50 minutes, or until hot.

Strangely I already have all those ingredients in my house!

We know this is my dad's last one so we are all making a real effort to spend the whole day together cooking and playing football.

You can be creative with stuffing. You can throw in some raisins, apples, mushrooms, pecans, etc.
